Background: A member of the Amaranthaceae plant family, Spinacia Oleracea is packed full of valuable nutrients.  High in calcium, iron, and fiber, the plant also contains the essential vitamins A, C, E and K. Having originated in central Asia, Spinacia Oleracea was believed to have been brought west into Europe by the Muslims centuries ago.
